Obbattu Saaru/Holige Saaru
Holige saaru / Obbattu saru is a delicious sambhar made from the strained water (bele kattu) while preparing hoorana.
Ingredients :
Bele Kattu/ Residual of dal
Onion - 1 medium
Garlic cloves - 4 -5
Mustard seeds - 1/2 tsp
Green/Red chillies - to the taste
Jeera - 1/2 spoon
Coriander seeds - 1/2 tsp
Cinnamon stick - 1 inch
Cloves - 3 - 4
Grated cocnut (fresh/dry) - 1 tbsp
Curry,Coriander leaves - few
Tamarind juice - to the taste
Hoorana/Jaggery - to the taste
Oil - 1 Tbsp
Salt - to the taste
Method :
Dry roast (or put 1/2 tsp oil) all the ingredients.
While frying add coconut, curry, coriander leaves at the end.
Grind all the ingredients to a paste adding small quantity of water.
Take a vessel, add 1 tbsp of oil, add mustard seeds, curry leaves, red chillies.
Now add the ground paste to it, fry for few minutes, now add the residual of dal kept aside. Add turmeric powder, tamarind juice, jaggery or hoorana, idea behind adding hoorana is to get thickness, if hoorana is added no need of jaggery as it will have sweetness in it, add water as per the need. Bring it to boil.
Tastes good when served hot with Rice/Raagi Mudde...
