Badanekai Saaru
This one is a simple recipe & tasty one to have with a hot rice & ghee.
Ingredients :
Brinjal : 2 -3
Tomatoes : 2 -3
Groundnuts : 1- 2 tsp
Jeera/Cumin seeds : 1/2 tsp
Grren chilies : 3 - 4 depends
Sambhar Powder : 1/2 - 1 tsp
Tamarind juice : 1 - 2 tsp (optional)
Onion : 1 small.
Salt : to the taste.
Oil : 1 tsp
Seasoning : Mustard seeds, Curry leaves.
Take a vessel add all the veggies & peanuts, jeera, a pinch of salt. Boil it until they get soft or can pressure cook it for 2 whistles.
When its cooled mash the vegetables with a spoon as shown.
Take a kadai, add 1 tsp of oil, add mustard seeds, curry leaves, chopped onion, fry it until onion turns translucent.
Add mashed brinjal & tomato, add water as per your wish, if one want thick, then add small amount of water. Add Sambar powder, bring it to boil.
Nice to have with rice.
Tastes great with hot rice, ghee & Dry Aloo masala.
