Batata Vada
Batata Vada is a popular street food @ Maharashtra, it is a delicious evening snack to have with tea, it can also be had with pav as breakfast, its so popular in Mumbai that its available all 24 hours.
Ingredients :
Batter :
Besan/Bengal gram flour : 1 cup
Rice flour : 1 -2 tsp
Baking soda : 1 pinch
Turmeric powder : 1 -2 pinch
Red chilli powder : 1 tsp (optional)
Salt : to the taste
Oil : 1tsp
Filling :
Potatoes : 3 - 4
Green chillies : 4 -5
Urad dal : 1tsp (optional)
Coriander,Curry leaves : few
Mustard seeds : seasoning
Method :
Wash & boil the potatoes (pressure cook for 3 whistles).
Mash them without lumps on cooling.
Take a vessel, add 1 tsp of oil, add mustard seeds, green chilies & curry, fry it for a while, turn off the flame, add coriander leaves.
Now add mashed potato, mix well adding salt to the taste.
Now take a kadai, add 1 tsp of oil , heat it, turn off the flame, add besan flour, rice flour, turmeric powder etc, make a batter adding water to a medium consistency, not too thick or too thin..so it should be easy to dip potato balls & to deep fry.
Now make round balls & flatten them, keep aside.
Now take a kadai add oil enough to deep fry the vadas..
Dip the potato balls one by one in to the batter, deep fry them
Fry on both sides..
Serve Hot, it tastes good when its hot..can be served with mint chutney, or tomato sauce.
Several variations can be made in filling, spices can be added, onion can be added.
