Shenga Chutney
This chutney pudi is basically one of the chutneys from North Karnataka, goes well with chapati, roti, rice & even with uppit, when u are bored of having your regular upit :), as we all know the proteins in peanut this makes chutney healthier too.
Ingredients :
Peanuts : 2 cups
Garlic : 4 -5 pods or more(depends whether one like garlic or not)
Red Chillies/ Powder : 6 / 2 tbsp( as per taste)
Curry , Coriander leaves : few
Tamarind : 2 inches ( optional)
Jaggery : 1/2 tsp( optional)
Dry coconut : 2 tsp (optional)
Salt : to the taste
Method :
Dry roast the peanuts.
Warm the dry coconut gratings.
Now roast curry leaves, Red chillies, garlic, tamarind on low flame.
Mix all the ingredients together after cooling down.
Grind altogether coarsely.
Tastes good with curd as combination with all types of roti, dosa, can be had with ghee or butter for chapatis/dosas..
