Puliyogare is a favorite rice dish for many.
Ingredients :
For Powder :
Peanuts : 1 cup
Urad dal : 1 cup
Bengal dal : 1 cup
Toor dal : 1/2 cup
Coriander seeds : 1 cup
Black Til/Sesame : 1 cup
Black pepper : 1/4 cup
Mustard seeds : 1 tbsp
Methi seeds : 1 tbsp

Am posting a recipe which is spicy one, feels great to have it hot with mudde or rice :)

Kai holige is a delicious sweet dish, this is another alternative way to make sweet dish by coconut when one has got bored of kobbari mithai.
Ingredients :

Freshly grated coconut : 2 cup
Chiroti rava : 1 Tbsp (optional)

Ennagai made from soutekai/cucumber is a common dish in North Karnataka.Its the best combination with jolada roti, can be had with chapati also. These cucumbers are in miniature form of Mangalore / sambar soutekai.

Hesarukaalu saaru

This saaru is simple one & makes good combo with rice.
Ingredients :
Green gram : 1 - 2 cup.

Huralikai Palya
Beans palya
Huralikai palya makes a good side dish for chapati & rice (with rasam).
Ingredients:
Green Beans/Huralikai : 250 gms
Onion : small (optional)
Green /Red chillies : to the taste
Bengal & Urad Dal : 1 tsp each
Curry & Coriander leaves : few
Fresh grated coconut : 2 Tbsp
Oil : 1 tbsp
Salt : to the taste
Method :
Clean the beans, remove the fiber, chop the beans.
Take a kadai, add oil , add mustard seeds, when they splutter add chopped green or red chillies, add curry leaves, chopped onion, fry until the onions looks translucent.
Now add chopped beans, saute for few seconds then add 1/2 cup of water, cook it until it loses its rawness.
Add fresh coconut gratings, let it cook for few second, keep it in simmer closing the lid.
Serve with chapati, goes well with rice & rasam..

This chutney pudi is basically one of the chutneys from North Karnataka, goes well with chapati, roti, rice & even with uppit, when u are bored of having your regular upit :), as we all know the proteins in peanut this makes chutney healthier too.

This is an simple & tasty chutney recipe to have with Roti or chapati, dosa too. As unripe tomatoes are sour, so it gives a different tangy taste when jaggery, chillies are added.
Ingredients :
Green/UnripeTomatos : 4 -5 medium sized
Green/Red chillies : 4 -5 (depends)
Garlic cloves : 3 - 4
Jaggery : to the taste
Uchellu pudi : 1-2 tsp
Jeera : 1/2 tsp

This one is a simple recipe & tasty one to have with a hot rice & ghee.
Ingredients :
Brinjal : 2 -3
Tomatoes : 2 -3
Groundnuts : 1- 2 tsp
Jeera/Cumin seeds : 1/2 tsp
Grren chilies : 3 - 4 depends
Sambhar Powder : 1/2 - 1 tsp
Tamarind juice : 1 - 2 tsp (optional)
Onion : 1 small.
Salt : to the taste.
Oil : 1 tsp
Seasoning : Mustard seeds, Curry leaves.

ಮೆಣಸಿನ ಕಡುಬು ~ Menasina Kadabu
This dish is an ideal one when you suffer from cold & cough, yes a type of medicine :). Nice to have in rainy, winter seasons. Amma used to cook this when some one wld get cold & cough at home.
Ingredients :
Jaggery : 1 cup
Dry Ginger( powdered) : 1/2 cup
Black pepper : 1 Tbsp
Hurikadale hittu : 1/2 cup
All these can be varied to ones taste.
For Dough :
Wheat flour : 1 Cup
Chirotti Rava : 1 tbsp
Method :
Take Dry ginger, black pepper, dry roast the peppers, now make powder from ginger & pepper, mis well.
Add powdered Jaggery, hurikadale hittu, here you can adjust the taste as u wish, if more spice is needed one can add more ginger powder/pepper powder.
Take wheat flour and chirotti rava(optional), mix well adding water as we prepare dough for chapatis, let it rest for 20 mins.
Make small sized balls out of dough as we make to prepare pooris, roll them as shown.
Now fill them with the powder as shown
Keep a vessel, add water, add a tsp of oil so that dumplings/kadubu should not get stick to each other.
When water starts boiling add kadubu one by one. Let it cook for 5 - 8mins, one can see the color change & remove from the water. Nice to have when it is hot, tastes good when its cooled also..& when its syrupy inside it tastes great.
An household remedy for cold.. :)

Holige/Obbattu is a sweet dish prepared on the festival occasions like Ugadi, Deepavali, Navarathri, VaraMahaLakshmi Vratha, on Pournami days.
Ingredients :
Filling/Hoorana :
Channa Dal/Toor Dal : 2cups
Jaggery : 1 cup or less to it.
Coconut gratings(dry or fresh) : 1/2 cup or less (optional)
Dough/Kanaka :
Maida/All purpose flour : 1/2 cup
Chiroti rava : 1/2 cup
Turmeric powder : a pinch (added for color)
Salt : 2 pinches
Oil : 1/2 tsp

Am here again with another recipe having Aloo/Batata exclusively for Aloo lovers :)..
As per my knowledge Chettinad recipe stands out because of the fresh ground masala, little spicy, any how its up to one's taste that how much spice they want.

Ingredients :
Potato : 2 -3
Tomatoes : 2
Onions : 2
Curry leaves : few
Fresh grated coconut : 1tbsp
Green Peas : 1/2 cup (optional)
Masala :
For grinding :
Cinnamon : 1- 1 1/2inch
Cardamom : 2
Cloves - 2 -3
Coriander seeds : 1 tsp
Fennel seeds : 1 tsp
Black pepper : 1 tsp
Red chillies / Red chilli powder : to the taste
Dry roast all the above ingredients & grind them.
Method :
Peel and cut the potato in to cubes.
Cut the onions in to slices.
Cut tomatoes into pieces .
Take a vessel, add water, bring it to boil, add cubes of potatoes to it. let it cook until it is soft. or potatoes can be pressure cooked & then cut into cubes or as per ones wish.
Take a pan add oil, add mustard seeds, when it splutters add curry leaves, onion slices, cook until onion turns translucent, add hing, now add tomatoes, cook until the tomato becomes soft. Now add cooked cubes of potato, green peas, fry for a while. add coconut gratings, fry for few seconds, now add ground masala, salt fry for few mins, now add water let it boil for few mins , if you dont want to have gravy, add little water enough to get the potato cubes coated.
Can be had with Roti, Chapati or Rice..
Serve hot...
Few Variations:-
If you want thick gravy you can add :
Channa dal : 1/2 tsp
Urad dal : 1/2 tsp
Jeera : 1/4 tsp
Dry roast all these & grind it to fine powder.
Tomato puree : 1 tbsp
Grind coconut to fine paste : 1tbsp of grated coconut
These are optional, it does give little different taste, but you will get thick gravy.
