Akki Masala Rotti
Akki Masala rotti is a well known dish in Karnataka, it can be made for breakfast or evening snacks, it is delicious.
Rice flour : 2 cups
Carrot : 1 - 2
Onion :1 - 2
Menthya/Fenugreek leaves : 1 - 2 cups chopped
Green chillies : to the taste
Curry & Coriander leaves : few
Salt : to the taste
Turmeric : 2 pinch
Chop the onions in to small pieces.
chop green chillies, clean & chop fenugreek leaves or u can use dill leaves/sabasige or palak or all the three can be used.
Now take a vessel, add 2 cups of water, bring it to boil, add salt.
Now add Rice flour to the boiling water, quickly stir it to avoid lumps, once it comes in the form of solid as show keep it covered with a lid for few mins, let it cook in low flame.
Turn off the flame, let it cool .
Now take a mixing bowl, add the all ingredients, grated carrot, chopped leaves, green chilies,add salt to taste, turmeric powder. add cooked rice flour to this, add as much of as water you want to make the dough, knead altogether to make a nice dough.
Now make rotis on a butter paper/polythene cover, applying oil to the sheet.
Keep a tava/frying pan on the flame, once it is hot, sprinkle oil, place the rolled roti, roast on both sides.
Serve Hot with pickles/shenga chutney/curds or can be had without any side dishes.
These rotis can be made with lot of variations like one can add chopped tomatoes/cabbage gratings/chopped capsicum etc..
