Ellu Hollige

Ellu hollige is a tasty, healthy sweet dish.It has an unique taste.Vastly made in North Karnataka as per my knowledge.
Mainly made during some festivals, special days like Ellu Amavasya in Gadag district.
Here am using black sesame seeds/til.


Ingredients:

For filling:
Sesame seeds/Til : 1 cup
Jaggery : 1 cup / less than a cup / as per the taste
Dry coconut gratings : 1 Tbsp ( if u wish to add)

For Dough :
Maida flour : 1/2 cup
Chiroti rava : 2 -3 tsp
wheat flour :  2 tsp
Salt : a pinch

How to make Jolada Rotti?



Steps-
1. place flour in a small heap and make a small pit
2. heat water to boiling point
3. pour water into the flour heap
4. using a spoon mix flour and water till the mixture is consistent
5. then add more flour and water at room temperature; mix it thoroughly
6. continue kneading the wet flour until its consistent (without lumps)

Prepare roti immediately. If kept for long time flour will start losing moisture and roti will start tearing at the edge making it difficult to lift and place on tawa.



Unlike wheat flour dough, jowar flour cannot be rolled. It has to be flattened by rapid patting with palms. With some practice you can beat the flour into thin circles. While baking jowar roti, only water is applied with a piece of cotton cloth. Roti is cooked in two to three minutes.

Badanekai Maseda Saaru ~ ಮಸೆದ ಬದನೆಕಾಯಿ ಸಾರು

A tasty sambar made out of brinjal for brinjal lovers is here..:)

Ingredients :

Toor dal : 3/4 of a cup
Brinjal : 1cup
Green chilies : 4 -5 (depends)
Cumin seeds : 1 tsp
Garlic : 4 -5 pods
Curry leaves : few
Onion : 1 medium
Tomato : 1 (optional)
Tamarind juice : to the taste
Jaggery : as per taste
Turmeric powder : 2 pinches 
Sambar powder : 1 -2 tsp
Salt : as per taste
Oil : 1tbsp


Take  brinjals, wash & cut them in to desired shape. Chop the onion.
Take a vessel wash toor dal, mix all ingredients together, toor dal, chopped brinjal, onion, garlic, green chilies, curry leaves, add sufficient water. 


Pressure cook it for 3 whistles..
It can be cooked without pressure cooker, take a vessel wash and add toor dal, add water bring it to boil, when dal is half cooked add chopped brinjal & other ingredients. Let it cook until toor dal becomes soft.
After pressure cook it looks as in below picture.


Now strain that excess water it to a vessel, keep it aside.


Now take a spoon, lightly mash the dal & brinjal mixture.


Now its ready.


Take a vessel, add oil,  when oil gets hot, add mustard seeds, when it starts spluttering , add mashed  dal-brinjal, now add that excess water kept aside, add sambar powder, tamarind juice, jaggery, turmeric powder, salt & bring it to boil.


Serve hot.


Goes well with Rice, mudde.
If u make it little thick, it can be had with chapati.

Mangalore Soutekai sambhar

Mangaluru Southeykai sambar is an tasty sambar made by freshly grounded spices.
I still remember the taste & aroma when i tasted it for the  the first time, i was enthralled by that flavor :)



Ingredients :

Sambar Cucumber : 1 cup (diced)
Toor dal : 2 Tbsp
Channa dal : 1 Tbsp
Urad dal : 1 Tbsp
Rice : 1 tsp
Coriander seeds/Powder : 3 Tbsp
Cuminseeds/Powder : 1 Tbsp
Fresh Coconut gratings : 1/2 cup
Red chilies : 6 -8 
Tamarind : to the taste
Jaggery : to the taste
Hing : a pinch 
Oil : 2 tbsp
Salt : as per taste



Method :

Wash the cucumber, remove the seeds, cut in to pieces. 



Now take a kadai, add a spoon of oil, roast the dals & rice one by one, then red chilies.
If you are using coriander, cumin seeds, then those should be roasted as other ingredients.
Mix all the ingredients together, ground it to a fine paste adding enough water


Take a vessel add oil, when its hot add mustard seeds when it splutters, add diced cucumber, saute it, keep on medium flame close the lid.


Let it cook for few mins, sprinkle salt & saute close the lid, continue to keep on medium flame flame, when cucumber almost loses its rawness, add the masala paste to it, saute for few seconds.


add water, let it boil , add tamarind juice, jaggery & salt.



Let it boil until cucumber softens.
Now give seasoning, take a kadai add 1 tsp of oil, red chilies, curry leaves, hing & add to the Sambar.



Serve hot .


Tastes great with rice.


To make sambar more spicy / hot one can use Gowribidanur/Guntur chilies as Bydagi chilies gives good color.

Avarekalu Usli another tasty dish prepared using avarekalu, can be had with chapati, akki roti, poori or side dish with Ragi mudde, Rice.

Ingredients :

Avarekalu : 1- 2 cup
Onion : 2 - 3
Green chilies : 5 - 8 ( as per the taste)
Curry , Coriander leaves : few
Grated fresh coconut : 1/2 cup
Turmeric powder : 2 pinches
Fenugreek seed, Cumin seed powder : 1-2 tsp
Salt : as per taste
Oil : 2 Tbsp
