ಅವರೇಕಾಳು ಉಸ್ಲಿ ~ Avarekalu Usli

Avarekalu Usli


Avarekalu Usli another tasty dish prepared using avarekalu, can be had with chapati, akki roti, poori or side dish with Ragi mudde, Rice.

Ingredients :

Avarekalu : 1- 2 cup
Onion : 2 - 3
Green chilies : 5 - 8 ( as per the taste)
Curry , Coriander leaves : few
Grated fresh coconut : 1/2 cup
Turmeric powder : 2 pinches
Fenugreek seed, Cumin seed powder : 1-2 tsp
Salt : as per taste
Oil : 2 Tbsp


Method:
As the first part of preparing usli, let us prepare menthya- jeera powder.  As it gives an dashing taste to the dish, the flavor of menthya & jeera brings an unique taste to the usli.


Cumin seed : 2 tsp
Fenugreek seed : 1 tsp
Dry roast both the seeds separately , let them cool to the room temperature.




After cooling down mix and grind  to a fine powder.
One should take care while measuring menthya as if its taken more than Jeera, will get bitter taste as fenugreek seeds are bitter in taste. This powder can be stored for moths together, as it can be added to Chittranna, rasam etc.,


Now lets start the preparation of usli,
Chop onions, green chilies.
Take a vessel, add oil, when its hot add mustard seeds, when it splutters add green chilies, curry leaves, onion. Let it cook for few minutes until onion turns translucent.


Now add avarekalu, mix well, close the lid, keep in medium flame. Let it cook for at least 10 mins in low flame, saute in between & close the lid.


Now after about 10 mins, add salt saute, close the lid for another 2 -3 mins. Now check the beans, it wld have lost its rawness and almost looks like as shown in below picture.


Now add grated fresh coconut, menthya- Jeera powder, coriander leaves.


Mix well.


Add a cup of water, close the lid, let it cook until the beans get softened.


Or if beans are not that tender, you can put it in pressure cooker for 2 whistles.



Usually for usli tender beans are preferred as it gives awesome taste.


Serve hot with chapati or roti. 
One should try this wonderful dish as its Avarekalu season..:)
