Putani Chutney

Putani Chutney is a popular item in North Karnataka. This dry chutney goes well with jolada rotti, ragi rotti, chapathi, dosa and even items like paddu and idli. You can mix either curds or ghee with the chutney to make it a pasty. Its easy and quick to make.

Ingredient-
1. Putani (Hurgadle) - 250 gms
2. Jeera - 1 tea spoon
3. Chilly powder - 2 tea spoons (or as required)
4. Garlic - 8 to 10
5. Curry leaves - 2 or 3 sticks
6. Salt - to taste
7. Lemon - 1

Method-
1. Put all items except lemon into the mixer jar
2. Run the mixer until the powder is fine and consistent
3. Squeeze lemon juice and mix again
4. Store in a air-tight jar. Ideal to use it within a month.

ಶೇಂಗಾ ಹಿಂಡಿ/ಚಟ್ನಿ ~ Shenga Hindi/Chutney

Shenga Chutney



This chutney pudi is basically one of the chutneys from North Karnataka, goes well with chapati, roti, rice & even with uppit, when u are bored of having your regular upit :), as we all know the proteins in peanut this makes chutney healthier too.

Ingredients :

Peanuts : 2 cups
Garlic : 4 -5 pods or more(depends whether one like garlic or not)
Red Chillies/ Powder : 6 / 2 tbsp( as per taste)
Curry , Coriander leaves : few
Tamarind : 2 inches ( optional)
Jaggery : 1/2 tsp( optional) 
Dry coconut : 2 tsp (optional)
Salt : to the taste

ಟೊಮ್ಯಾಟೋ ಕಾಯಿ ಚಟ್ನಿ ~ Tomato Kayi Chutney

                                                   Tomato Kayi Chutney

This is an simple & tasty chutney recipe to have with Roti or chapati, dosa too.  As unripe tomatoes are sour, so it gives a different tangy taste when jaggery, chillies are added.




Ingredients :
Green/UnripeTomatos  :  4 -5 medium sized  
Green/Red chillies : 4 -5 (depends)
Garlic cloves : 3 - 4
Jaggery : to the taste
Uchellu pudi : 1-2 tsp
Jeera : 1/2 tsp
Curry, Coriander leaves : few
Salt : to the taste
Oil  : 1 tsp
Turmeric powder : 1 pinch
Hing : 1 pinch while seasoning
Mustard seeds : 2 pinchs

ಸುಟ್ಟಬದನೇ ಕಾಯಿ ಪಚಡಿ/ಚಟ್ನಿ ~ Egg plant chutney

Sutta badanekai pachadi

Sutta badanekai pachadi is a delicious dish, quick to make.




Ingredients :
Eggplant/Badanekai : 1-2 
Onion : 1 medium
Red chilli powder: 1 -2 tsp
Uchellu pudi : 1 - 2 tsp
Salt to taste 
Coriander leaves : few
Oil : 1/2 tsp



Method :
Wash the eggplant. Apply oil on it, prick it with knife, put it on flame, burn it turning it now & then, until it gets soft, chop the onion.





Let it cool, peel off the skin, smash it.




Mix all the ingredients together.




can be served with Jolada roti, chapati as side dish.




Its typical North Karnataka dish.
